Grape: 85% Nebbiolo, 15% Vespolina

Location: Boca, Northern Piedmont

Soil: Volcanic porphyry, pink color, mineral-rich

Vinification: 30-day fermentation in steel/wood with natural yeast. 3 years in Slavonian oak, 12 months in bottle

Tasting: Black cherry, herbs, menthol, spice, licorice. Vibrant and balanced. Rated up to 96pts by Parker

Alcohol: 12.5–14%

Pairings: White meats, game, stew, structured fish

Piane

Grape: 90% Croatina, 5% Nebbiolo, 5% Vespolina

Location: Boca, Prato Sesia

Vinification: 5-6 day skin contact in steel/wood. 2 years in 500L tonneaux + big oak

Tasting: Blackberry, cherry, tobacco, spice. Velvety and mineral

Alcohol: 13–14%

Pairings: Red and white meat, game

Mimmo

Grape: 65% Nebbiolo, 30% Croatina, 5% Vespolina

Vinification: Long fermentation by hand, 2 years oak aging. Croatina/Vespolina short ferment, 1 year tonneaux + 1 year big oak

Tasting: Prunes, wild strawberries, licorice. Mineral, bright acidity and balanced tannins

Alcohol: 12.5–13.5%

Pairings: Roasted pork, red and white meat

Maggiorina

Grape: 40% Nebbiolo, 40% Croatina, 5% Vespolina, 15% other old grapes

Vinification: Field blend harvested and fermented together. 1 year in steel tanks

Tasting: Roses, cherries, strawberries. Mineral and spicy with acidity and tannin

Alcohol: 11.5–12.5%

Pairings: Pasta with meat sauce, red and white meats
