Organic farming has always been practiced here and officially certified since 1995.

The vineyard is part of a self-sufficient and balanced ecological system, including green manure herbage like hairy vetch, field beans, and peas. The soil is fed exclusively with organic fertilizer and copper use is minimized. Far from urban zones, the area around Collestefano is entirely rural. Harvesting is done exclusively by hand.

A new wine cellar allows for traditional winemaking operations with minimal use of sulfur dioxide — far below legal limits.

Winemaker: Fabio Marchionni

The Marchionni family moved to Rustano near Castelraimondo in the 1960s, leaving behind hardship in Camerino. They purchased Collestefano in 1978.

Fabio, son of Benedetto and Anna, bottled the first vintage of Verdicchio di Matelica in 1998 after studying enology and gaining international wine experience. Alongside him are his wife Silvia and daughters Elena and Serena.
