CULTIVATION - HARVEST:
Clayey - silty soil. There are 7800 vines per hectare, and its training system is monolateral Guyot.
MATURATION AND REFINEMENT:
The vine comes from the R6 clone, which originates good aromatic and well-rounded wines. The grapes
are harvested during the freshest hours of the day
and then immediately left to ferment off the skins. The must obtained and cold decanted is considerably clear, and is left to ferment into temperature-controlled stainless steel tanks (temp max 17 °C). The wine is then drawn twice off the lees, and the winter allows the wine to get stable and limpid - a Pinot Grigio which before the bottling is gently clarified and filtered.
TASTING NOTES:
Straw yellow colour. The aroma is flowery and reveals intense notes of ripe fruit.
The palate is well-rounded and crisp.

Raw and cooked fish, main courses and white meats.

CULTIVATION - HARVEST:
The vine training system is monolateral Guyot.
MATURATION AND REFINEMENT:
The grapes harvested in early September come from a single clone named Ersa. 70% of the grapes is vinified off the skins, while the remaining 30% macerates for one night (with skins and must) at 6 °C. The musts obtained is allowed to settle and clarified, then mixed and left to ferment into temperature-controlled stain- less steel tanks, where in two weeks the desired alco- hol content is reached. The wine is then drawn twice off the lees, and the winter period allows the wine to get limpid. In the springtime, a light clarification is made before the bottling.
TASTING NOTES:
Straw yellow colour with greenish hints.
The aroma reveals intense notes of elderflowers, golden apple and crusty bread.
The palate finishes with an attractive mix of well- balanced acidity, softness and structure.

Fish appetizers, white meats and cold cuts.

North West of Italy, Fiume Veneto (PN).
CULTIVATION - HARVEST:
Clayey - silty soil. There are 7800 vines per hectare, and its training system is monolateral Guyot.
MATURATION AND REFINEMENT:
The vine comes from two clones, the classic R3 which originates strongly flavoured wines, and 297 which originates well-structured wines. The grapes of the aromatic clone are left to macerate for one night at 6 °C, while the other grapes are vinified off the skins. The musts obtained are cold decanted in order to obtain a clean juice, then mixed and left to ferment into temperature-controlled stainless steel tanks (temp max 16 °C). The fermentation lasts 14 days, and then the wine is then drawn twice off the lees, in order to remove the coarsest lees and let the finest ones into the wine. The winter allows the wine to get stable and limpid - a Sauvignon which before the bottling is gently clarified and filtered.
TASTING NOTES:
Straw yellow colour with greenish hints. The elegant and very aromatic aroma is reminiscent of fruit, such as white peach, and wildflowers. The velvet-smooth palate gradually unfolds these nose sensations.

Shellfish, raw, steamed of fried fish, appetizers.

MATURATION AND REFINEMENT:
The vine comes from the Ersa FVG150 clone, which originates higly aromatic and mid-structure wines. The grapes are harvested during the freshest hours of the day and then immediately left to ferment off the skins. The must obtained and cold decanted is clear, and is left to ferment into temperature-controlled stainless steel tanks (temp max 62 °F).
TASTING NOTES:
Color: Straw yellow colour.
Nose: The aroma is flowery and reveals notes of peach and dried fruit.
Palate: Well-rounded, crisp, mineral with good struc- ture.

VINEYARD:

CULTIVATION - HARVEST:
Clayey - silty soil. There are 7800 vines per hectare, and its training system is monolateral Guyot.
MATURATION AND REFINEMENT:
The grapes are harvested during the first week of October, and left to ferment in stainless steel tanks for about two weeks. The wine is frequently pumped down the cap and then undergoes several délestages, made in order to remove from the skins colourings and harsh tannins. After this passage, having the wine reached its ideal alcohol content, the wine is drawn off the pomace, and left to ferment into stainless
steel vats where it starts cleaning thanks to a natural static decantation. Thanks to the winter temperatures, the microbiological balance is reached, and the only thing we have to do is to carefully draw off the lees in order to obtain a clear wine. Refosco is bottled late in the summer following the harvesting, with a further refining in glass for a month.
TASTING NOTES:
Intense ruby red colour with purplish hints. The aroma is intense and vinous, with subtle notes of Morel. The palate is elegant and dry, soft, with dense tannins in- tegrated into a presence of sweet fruit and highlighted by a good acidity.
ALCOHOL CONTENT: 13.50% vol.
RECOMMENDED PAIRINGS:
Grilled meat, game and mature cheese.
SERVING TEMPERATURE: 18°-20°C.
