VINEYARD:
The soil is composed of equal proportions of sand and clay; this medium-heavy textured soil produces wines with rather intensely aromatic and savoury flavourscompared to looser soils.
CULTIVATION - HARVEST:
Rows with Guyot system (single and double), manual harvest with grape selection.
MATURATION AND REFINEMENT:
Vinification in stainless steel tanks with skin contact for 36-48 hours at a controlled temperature until a must is obtained with 3% abv. Further fermentation with foam formation in pressure steel tank for a few days. At the end cold stabilisation at 25 °F, microfil- tration and subsequent bottling.bottling.
TASTING NOTES:
Intense pink colour, fine mousse. Lush aroma, fragrant and aromatic, intense red fruit and strawberries. A sweet, soft and delicate taste with refreshing aromatic finish.
ALCOHOL CONTENT: 5,5% vol.
RECOMMENDED PAIRINGS: Fruit desserts, dried fruit, walnuts, hazelnuts, almonds, pistachios, figs pastry, panettone, dark chocolate Very pleasant as aperitif or as refreshing drink at any time of day.
SERVING TEMPERATURE: 42°-46°F.

Braida - Vigna Senza Nome Moscato d'Asti DOCG

Mango d’Alba (AT), Piedmont.
VINEYARD:
The mainly calcareous-sandy soil provides excellent drainage in order to give the plants vigour without encouraging excessive vegetative growth. Altitude 1640 ft a.s.l.
CULTIVATION - HARVEST:
Rows with Guyot system (single and double), manual harvest with grape selection.
MATURATION AND REFINEMENT:
Cold soak for a few hours in horizontal press with sub- sequent pressing. Vinification with foam formation in pressure tanks at controlled temperature for 20 days at approximately 60 °F. At the end of fermentation, cold stabilization at 25 °F, then microfiltration and bottling.
TASTING NOTES:
Bright straw yellow, gentle and persistent bubbles. An extraordinary fresh bouquet, delicate notes of grapes, orange blossoms, jasmine and elderflowers.
ALCOHOL CONTENT: 5,5% vol.
RECOMMENDED PAIRINGS: Fruit desserts, fruit, pastry, panettone, hazelnut cake, particular cheeses such as Castelmagno. Very pleasant as aperitif or as refreshing drink at any time of day.

Braida - Il Bacialé Monferrato Rosso DOC
CLASSIFICATION: Monferrato Rosso DOC.
GRAPE VARIETIES:
60% Barbera, 20% Pinot nero, 10% Cabernet Sauvi- gnon, 10% Merlot.
GROWING LOCATION: Castelnuovo calcea (AT), Piedmont.
VINEYARD:
The loose soil made of limestone sand and is therefore lighter. The soil heats up quicker, even the deeper layers of subsoil, allowing the roots to start working earlier. Altitude 755 ft a.s.l.
CULTIVATION - HARVEST:
Rows with Guyot system (single and double), manual harvest with grape selection.
MATURATION AND REFINEMENT:
The grapes are processed separately, alcoholic fermen- tation in steel tanks and malolactic fermentation takes place in wooden casks. The wine is aged partially in big wooden vats and the remaining part in small oak casks for 12 months. Assemblage is followed by a period in the bottle of 6 months.
TASTING NOTES:
Ruby red color. Warm mouth feel, with plum, black pepper and cinnamon with a persistent finish. Elegant and complex wine.
ALCOHOL CONTENT: 13,5% vol.
RECOMMENDED PAIRINGS: Appetizers, red and white
meats, young cheese.
SERVING TEMPERATURE: 60°-65°F.

CULTIVATION - HARVEST:
Rows with Guyot system (single and double), manual harvest with grape selection.
MATURATION AND REFINEMENT:
Temperature controlled maceration, maturation in large oak barrels for 12 months.
TASTING NOTES:
Violet ruby red color. Well defined fragrances of
ripe cherry and small red fruits. Intense mouth feel, full-bodied and harmonious, with a long lasting finish. Excellent, well balanced, fragrant, pleasant to drink.
ALCOHOL CONTENT: 14% vol.
RECOMMENDED PAIRINGS: Pasta-based first courses,
red or white meat main courses, cheese and salami. SERVING TEMPERATURE: 60°-65°F.

CULTIVATION - HARVEST:
Rows with Guyot system (single and double), manual harvest with grape selection.
MATURATION AND REFINEMENT:
Temperature controlled maceration with careful cap management for 20 days. Refinement 15 months of ageing in barriques followed by minimum 12 months in the bottle.
TASTING NOTES:
Intense ruby red with purple hues. Notes of red berries, mint and vanilla. The bouquet is rich, aromatic and complex with a remarkable intensity and multilay- ered concentration. The wine is generous, voluptuous and full-bodied with a multidimensional structure, perfectly balanced between the grape characteristics and high quality oak, with a persistent long finish.
ALCOHOL CONTENT: 14,5% vol.
RECOMMENDED PAIRINGS: Heavy meat dishes, roasts,
also seasoned meat dishes and aged cheeses.
